Despite its otherwise commonplace appearance, the Pikeperch/Zander and its North American counterpart, Pickerel (Walleye) are among the most esteemed in the culinary world. In fact, Pikeperch/Zander is preferred because there is no fishy taste, and it is even more sweetly flavored then its North American cousin, Walleye.


Everyone- from the avid sport fisherman to the most discriminating chef agree that the Pikeperch/Zander is an incomparable foodfish; its meat, snowy white, fine of flake and sweetly flavored, may well be considered the sole of freshwater, not in a literal sense as their textures differs and their respective flavors lie somewhere between a mature Chablis and a young Reisling.


For centuries, European chefs have featured Pikeperch/Zander in their restaurants, unlike the Americans whose access to Walleye has been heavily restricted or illegal until now.
